Ingredients
  • 1 8-ounce can
    crushed pineapple (juice pack)

  • 1 cup
    shredded carrot

  • 1 cup
    chopped apple or pear

  • 1/4 cup
    shelled sunflower seeds

  • 1/4 cup
    raisins or dried tart cherries

  • 1/3 cup
    plain low-fat yogurt

  • 2 tablespoons
    creamy peanut butter

Directions
1.
Drain pineapple, reserving 1 tablespoon juice. In a medium bowl combine pineapple, carrot, apple, sunflower seeds, and raisins.

For dressing, in a small bowl stir together yogurt and peanut butter until smooth. Stir in reserved pineapple juice. Pour dressing over pineapple mixture; toss gently to mix. Cover and chill for 1 to 4 hours. Makes 6 side-dish servings.
