If you're not from New England, you may not be familiar with this sandwich served in restaurants and homes up and down the New England coast. It's an easy and delicious way to savor lobster.

1/2 cupmayonnaisesee savings

2 teaspoonsfresh lemon juicesee savings

1-1/2 teaspoonsDijon-style mustardsee savings

1 teaspoonolive oilsee savings

3/4 teaspoonchopped fresh tarragon OR: 1/4 teaspoon driedsee savings

1/4 teaspoonhot-pepper saucesee savings

1/4 teaspoonsaltsee savings

1/8 teaspoonblack peppersee savings

2lobster tails, cooked, shelled and meat coarsely chopped (about 2 cups)see savings

Directions

Whisk mayonnaise, lemon juice, mustard, oil, tarragon, pepper sauce, salt and pepper in medium-size bowl. Mix in lobster; cover with plastic wrap; refrigerate for at least 1 hour.
2.
Gently open each roll; lightly toast. Fill each with lobster mixture. Makes 4 rolls.
