  • 2 tablespoons vegetable oil
  • 1 pound ground round steak
  • 3 cloves garlic, finely chopped
  • 1 bag (16 ounces) classic coleslaw mix
  • 4 large carrots, peeled and shredded
  • 1/2 cup ketchup
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup water
  • 1/2 teaspoon red-pepper flakes
  • 6 scallions, trimmed and thinly sliced
  • 16 fajita-size flour tortillas (each about 7 inches in diameter)
In large nonstick skillet, heat oil over medium-high heat. Crumble in ground round steak; saute until no longer pink, about 5 minutes.
Add garlic, coleslaw mix and carrot; cook, stirring occasionally, until vegetables are softened, 8 minutes.
Stir in ketchup, soy sauce, water and red-pepper flakes; simmer 2 minutes. Remove skillet from heat. Stir in scallions.
Gently heat the flour tortillas following package directions. To serve, divide filling among tortillas and roll up. Makes 8 servings.
