Ingredients

1 recipe Caramel Sauce
-
3 tablespoons butter
-
2 teaspoons sugar
-
1/2 teaspoon ground cinnamon
-
4 cups sliced, peeled cooking apples
-
1-1/2 cups coarsely crushed cookies, such as biscotti, pecan shortbread, oatmeal, snickerdoodle, or chocolate chip (about 3 ounces)
-
Sweetened whipped cream (optional)
Directions
1
Prepare Caramel Sauce. In a 10-inch skillet, melt butter over medium heat. Stir in sugar and cinnamon. Stir in apple slices. Cook, uncovered, for 8 to 10 minutes or until apple slices are tender and slightly brown, stirring occasionally.
2
Place cooked apple slices in serving bowls. Top evenly with crushed cookies. Drizzle Caramel Sauce over top. If desired, serve with sweetened whipped cream. Makes 8 servings.
3
Caramel Sauce: In a heavy 2-quart saucepan combine 1/2 cup whipping cream, 1/2 cup butter, 3/4 cup packed dark brown sugar, and 2 tablespoons light-colored corn syrup. Bring to boiling over medium-high heat (about 5 to 6 minutes), whisking occasionally. Reduce heat to medium. Boil gently for 3 minutes more. Remove from heat. Stir in 1 teaspoon vanilla. Let sauce cool 15 minutes before serving with apple crisp. Cover and chill any leftovers for up to 2 weeks. (If chilled, let stand at room temperature for 1 hour before serving).
