Mixed Bean & Portobello Ragout

Ragout is simply a thick, savory stew of French origin. This healthy, meatless ragout features legumes and meaty portobello mushrooms. Serve crusty bread with this 20-minute dinner.

Ingredients

1 10-ounce packagefrozen baby lima beanssee savings

-
1 cupfresh green beans, cut into 1-inch piecessee savings

-
11/2 cupssliced and halved fresh portobello mushrooms or sliced white mushrooms (about 4 ounces)see savings

1 tablespoonolive oilsee savings

-
1 tablespooncold watersee savings

-
2 teaspoonscornstarchsee savings

-
1 141/2-ounce canCajun- or Italian-style stewed tomatoessee savings

1 cupcanned garbanzo beans, rinsed and drainedsee savings

Directions
1.
Cook lima beans and green beans in lightly salted water according to lima bean package directions; drain.
2.
Meanwhile, in a large skillet cook mushrooms in hot oil over medium heat for 5 minutes, stirring occasionally. Combine water and cornstarch; stir into mushrooms. Stir in undrained tomatoes and garbanzo beans. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Stir in cooked beans; heat through.
