Mexican Shrimp Salad Sandwiches
Add a little spice to your lunch with these sassy sandwiches, flavored with red pepper, lime juice and chopped cilantro.

Ingredients

2 cans (4 ounces each) small shrimp, rinsed and drained

2 tbsp. lime juice

1 tsp. freshly ground black pepper

2/3 cup diced red pepper
-
1/2 cup chopped fresh cilantro leaves
-
2 green onions, thinly sliced (about 1/4 cup)

1/4 cup light mayonnaise
-
8 slices Pepperidge Farm® 100% Natural Soft 100% Whole Wheat Bread, toasted

Iceberg lettuce leaves
Directions
1.
Stir the shrimp, lime juice, black pepper, red pepper, cilantro and green onion in a medium bowl. Add the mayonnaise and stir to coat.

Divide the shrimp mixture between 4 bread slices. Top with the lettuce and remaining bread slices.
Tip:
This recipe can be halved to make 2 servings.
