Mediterranean Strata

Ingredients
2 large onions, thinly sliced
2 teaspoons bottled minced garlic
2 tablespoons olive oil
1/2 cup chopped roasted red sweet peppers
1/2 cup chopped pitted green olives
Nonstick cooking spray
3 cups cubed Italian bread
1/2 cup crumbled feta cheese
6 eggs
1 14-ounce can chicken broth
1/4 cup dry white wine or chicken broth
1/4 teaspoon pepper
Directions
1. In a large skillet cook onions and garlic in hot oil over medium heat for 10 minutes or until onions are golden, stirring frequently. Remove from heat. Stir in roasted red peppers and olives. Coat a 10-inch quiche dish with nonstick cooking spray. Place bread cubes in dish. Top with onion mixture and crumbled feta cheese.
2. In a large bowl beat together eggs, chicken broth, wine, and pepper. Pour egg mixture over bread mixture in dish. Bake in a 350 degree F. oven for 35 to 45 minutes or until a knife inserted near center comes out clean. Remove from oven. Let stand 5 to 10 minutes before serving. Makes 8 servings.
