  • 6    sweet potatoes, about 5 pounds, pricked in 3 places with a forkOn Sale
  • 2  tablespoons  olive oilOn Sale
  • 2  tablespoons  maple syrupOn Sale
  • 2  tablespoons  apple cider vinegarOn Sale
  • 2  tablespoons  unsalted butter, cut into pieces and softenedOn Sale
  • 1/4  cup  toasted pecan halves, coarsely choppedOn Sale

Directions

Preheat oven to 400 degree F. Cut 6 squares of foil, each large enough to wrap 1 potato. Place each potato in foil, drizzle with oil and wrap lightly.

Bake on a sheet pan in middle of oven, turning once, until very tender, 1 to 1-1/4 hours. Transfer pan to rack to cool slightly. Carefully unwrap potatoes, halve and scoop out flesh into a bowl (discard skin). Mash with maple syrup and vinegar until smooth; salt and pepper to taste.

Transfer to a serving bowl; top with butter pieces and pecans. Makes 8 servings.
