Mashed Maple Sweet Potatoes with Toasted Pecans

Maple syrup and cider vinegar flavor this sweet potato side dish.

Ingredients

6sweet potatoes, about 5 pounds, pricked in 3 places with a forksee savings

-
2 tablespoonsolive oilsee savings

-
2 tablespoonsmaple syrupsee savings

-
2 tablespoonsapple cider vinegarsee savings

-
2 tablespoonsunsalted butter, cut into pieces and softenedsee savings

-
1/4 cuptoasted pecan halves, coarsely choppedsee savings

Directions
1.
Preheat oven to 400 degree F. Cut 6 squares of foil, each large enough to wrap 1 potato. Place each potato in foil, drizzle with oil and wrap lightly.
2.
Bake on a sheet pan in middle of oven, turning once, until very tender, 1 to 1-1/4 hours. Transfer pan to rack to cool slightly. Carefully unwrap potatoes, halve and scoop out flesh into a bowl (discard skin). Mash with maple syrup and vinegar until smooth; salt and pepper to taste.

Transfer to a serving bowl; top with butter pieces and pecans. Makes 8 servings.
