  • 1/2  of a 10-3/4-oz. loaf  pound cake or reduced-calorie loaf pound cake, cut into 1/2-inch cubesOn Sale
  • 1/4  cup  Amaretto or other almond-flavored liqueur, or 1/4 cup orange juice plus 1/4 teaspoon almond extractOn Sale
  • 1  8-ounce carton  fat-free or light dairy sour creamOn Sale
  • 2  tablspoons  powdered sugarOn Sale
  • 2    ripe mangoes, pitted, peeled, and cut into 1/2-inch piecesOn Sale
  •     Fresh fruit, such as kiwifruit, raspberries, or strawberries (optional)On Sale

Directions
1.
In a medium mixing bowl toss cake cubes with half of the Amaretto or orange juice/almond extract mixture. In a small mixing bowl combine remaining amaretto or orange juice mixture, sour cream, and powdered sugar.

For each serving, place a few cake cubes into the bottom of a parfait glass followed by about 1 tablespoon sour cream mixture. Add a layer of mangoes. Repeat until glass is full. Repeat with three more glasses. Cover; chill up to 1 hour. (Longer chilling could result in soggy cake cubes.) Garnish with fruit, if desired. Makes 4 servings.
