Mandarin Orange Salad

Toss fresh greens, raspberries, oranges, and almonds together for this fresh salad recipe. Lightly drizzle the vinegar and orange juice dressing for a refreshing spring or summer side dish.

Ingredients

1 tablespoonred wine vinegarsee savings

1 tablespoonorange juicesee savings

1 tablespoonolive, canola, or canola-soybean blendsee savings

1 teaspoonsugarsee savings

1/4 teaspoondry mustardsee savings

6 cupsmixed greens (such as baby spinach, pea fronds, Bibb lettuce, and/or escarole)see savings

1 10.5-ounce canmandarin orange sections (juice pack), drainedsee savings

1/2 cupfresh raspberriessee savings

-
1/4 cupsliced almonds, lightly toastedsee savings

Directions
1.
In a screw-top jar combine the vinegar, orange juice, oil, sugar, and mustard. Cover and shake well.
2.
Place greens in a large salad bowl. Pour dressing over salad. Toss gently to coat. Arrange orange sections and raspberries over greens. Sprinkle with almonds. Makes six 1-cup servings.
