MAMA's Super Cookies
Soy and whole wheat flour add a healthy spin to these spice cookies.

Makes about 44 cookies.
Ingredients

3 cups soy flour

1-1/2 cups whole wheat flour

1 tsp. baking soda

1/2 tsp. salt

1/2 tsp. ground cinnamon (optional)

1-1/4 cups canola oil

1 cup sugar

1/4 cup molasses
-
3 eggs
-
2 tsp. vanilla

Directions
1.
Preheat oven to 350 degrees F. In a bowl combine soy flour, whole wheat flour, baking soda, salt, and cinnamon, if using. Set aside.

In a large bowl beat together canola oil and the 1 cup sugar with an electric mixer on medium speed. Add molasses , eggs, and vanilla. Beat the mixture until smooth.

Add dry ingredients and mix thoroughly with a wooden spoon.

Drop by rounded teaspoons onto ungreased cookie sheets. Flatten with the bottom of a glass that has been dipped in sugar. Bake for 8 minutes or until edges are lightly browned.

Transfer cookies to wire racks to cool. Store cooled cookies in a covered container up to 3 days or place them in a sealed plastic freezer bag and freeze up to 6 months. Makes about 44 cookies.
