Mama's Glorified Cabbage

Ingredients
1 large cabbage, cored and coarsely chopped
2 tablespoons vegetable oil
1 1/2 cups chopped yellow onions
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 tablespoon chopped garlic
4 slices white bread, toasted, soaked in 1/2 cup milk, then squeezed dry
1 cup cream
1/2 cup butter
3/4 teaspoon salt
1/2 cup cayenne pepper
1 tablespoon chopped fresh parsley leaves
8 ounces mild Cheddar cheese, shredded
1/4 cup dry fine bread crumbs
Directions
1. Preheat oven to 350 degrees.
2. In a large pot, boil cabbage in water until just tender. Drain and set aside.
3. In a heavy, large pot or Dutch oven, heat oil over medium heat. Add onion, bell pepper, celery, and garlic. Cook, stirring, for 6 to 8 minutes, or until soft and lightly golden.
4. Add cabbage. Reduce heat to medium-low and cook, covered, for 10 to 12 minutes, or until very tender.
5. Tear bread slices into bits and add to the pot. Add cream and butter and cook, stirring to mix, for approximately 5 minutes, or until butter is melted. Season with salt and cayenne. Add parsley and stir to mix.
6. Transfer mixture to a casserole dish. Sprinkle evenly with cheese and bread crumbs.
7. Bake for 20 minutes, or until bubbly and hot.
