  • 1 1/2 cups Atkins Cuisine Penne Pasta
  • 2 cups cauliflower, broken into small florets
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons granular sugar substitue (sucralose)
  • 1/3 cup chopped celery
  • 1/4 cup chopped dill pickle
  • 11 1/4 ounces sliced pimiento-stuffed green olives

How to Make Classic Baked Macaroni and Cheese

Once you know how to make a classic macaroni and cheese, it's easy to customize it and make your very own version, adding things like chicken or chiles, herbs or spices.

Prepare pasta according to package directions. During the last 8 minutes of cooking time, add cauliflower florets. When pasta and cauliflower are tender, drain into a colander and rinse under cold water.
In a large serving bowl, mix mayonnaise, mustard and sugar substitute. Add celery, pickle and olives. Fold in pasta and cauliflower. Mix gently until all ingredients are combined.
Season to taste with salt and pepper and serve.
