Macadamia Turkey Salad on Cucumber Slices

Use leftover turkey to make the salad topper for the cucumber slices and you'll have an easy-to-assemble appetizer.

Ingredients

1 tablespoonbottled mango chutneysee savings

1/2 cupfinely chopped cooked turkey or chicken (about 3 ounces)see savings

1/2 of a smallapple, chopped (1/3 cup)see savings

2 tablespoonslow-fat mayonnaise dressingsee savings

1 tablespoonchopped fresh chives or sliced green onionsee savings

-
1/2 teaspoongrated fresh ginger or 1/8 teaspoon ground gingersee savings

-
1/4 cupchopped macadamia nuts, cashews, or peanutssee savings

-
241/4-inch-thick cucumber slicessee savings

Directions
1.
Snip any large pieces of chutney. In a small bowl, combine chutney, turkey, apple, mayonnaise dressing, chives or green onion, and ginger. Cover and chill for 2 hours. Just before serving, stir in half of the nuts.
2.
To serve, spoon a scant tablespoon of the turkey mixture onto each cucumber slice. Sprinkle with remaining nuts.
