Macadamia Turkey Salad on Cucumber Slices

  • 1  tablespoon
    bottled mango chutney

    finely chopped cooked turkey or chicken (about 3 ounces)

  • 1/2  of a small
    apple, chopped (1/3 cup)

  • 2  tablespoons
    low-fat mayonnaise dressing

  • 1  tablespoon
    chopped fresh chives or sliced green onion

  • 1/2  teaspoon
    grated fresh ginger or 1/8 teaspoon ground ginger

  • 1/4  cup
    chopped macadamia nuts, cashews, or peanuts

    1/4-inch-thick cucumber slices

Directions
1.
Snip any large pieces of chutney. In a small bowl, combine chutney, turkey, apple, mayonnaise dressing, chives or green onion, and ginger. Cover and chill for 2 hours. Just before serving, stir in half of the nuts.
2.
To serve, spoon a scant tablespoon of the turkey mixture onto each cucumber slice. Sprinkle with remaining nuts.
