Lower-Calorie Stroganoff-Style Beef
Yogurt replaces the traditional sour cream for a calorie-reduced version of this classic dish.

Ingredients
-
3/4 pound boneless beef round steak
-
1 8-ounce carton plain low-fat yogurt
-
2 tablespoons all-purpose flour
-
1 tablespoon tomato paste
-
1 teaspoon instant beef bouillon granules
-
2 teaspoons Worcestershire sauce
-
1/2 teaspoon dried thyme, crushed
-
1/4 teaspoon dry mustard
-
1/8 teaspoon pepper
-
2 cups sliced fresh mushrooms
-
1/2 cup chopped onion
-
1 tablespoon margarine
-
2 tablespoons dry white wine
-
2 cups hot cooked noodles
Directions
1.
Partially freeze meat. Trim separable fat from meat and thinly slice meat across the grain into bite-size strips.
2.
In a small bowl stir together yogurt and flour. Stir in tomato paste, bouillon granules, Worcestershire sauce, thyme, mustard, and 1/8 teaspoon pepper. Set aside.
3.
In a large skillet cook mushrooms and onion in margarine until tender; remove from skillet.
4.
Add beef to skillet. Cook 2 to 4 minutes or until thoroughly cooked. Remove from skillet.
5.
Add wine and 1/3 cup water to skillet. Bring to boiling. Stir yogurt mixture into skillet. Return meat, mushrooms, and onion to skillet. Cook and stir until thickened and bubbly. Cook 1 minute more. Serve over noodles. Makes 4 servings.
