Lower-Calorie Stroganoff-Style Beef

Ingredients
3/4 pound boneless beef round steak
1 8-ounce carton plain low-fat yogurt
2 tablespoons all-purpose flour
1 tablespoon tomato paste
1 teaspoon instant beef bouillon granules
2 teaspoons Worcestershire sauce
1/2 teaspoon dried thyme, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 tablespoon margarine
2 tablespoons dry white wine
2 cups hot cooked noodles
Directions
1. Partially freeze meat. Trim separable fat from meat and thinly slice meat across the grain into bite-size strips.
2. In a small bowl stir together yogurt and flour. Stir in tomato paste, bouillon granules, Worcestershire sauce, thyme, mustard, and 1/8 teaspoon pepper. Set aside.
3. In a large skillet cook mushrooms and onion in margarine until tender; remove from skillet.
4. Add beef to skillet. Cook 2 to 4 minutes or until thoroughly cooked. Remove from skillet.
5. Add wine and 1/3 cup water to skillet. Bring to boiling. Stir yogurt mixture into skillet. Return meat, mushrooms, and onion to skillet. Cook and stir until thickened and bubbly. Cook 1 minute more. Serve over noodles. Makes 4 servings.
