Linguine With Clams and Dried Tomatoes
Dried tomatoes give a more robust flavor to this classic pasta dish.

Ingredients
-
8 ounces packaged dried linguine, fettuccine, or spaghetti
-
2 6-1/2-ounce cans chopped or minced clams
-
1 medium onion, chopped (1/2 cup)
-
2 cloves garlic, minced
-
1/4 teaspoon crushed red pepper
-
2 tablespoons olive oil or cooking oil
-
1/2 cup dry white wine
-
1/3 cup oil-packed dried tomatoes, drained and cut into strips
-
2 tablespoons snipped parsley
-
Parsley sprigs (optional)
Directions
1.
Cook pasta according to package directions. Drain; keep warm.
2.
Meanwhile, for sauce, drain clams, reserving liquid. In a medium saucepan cook onion, garlic, and crushed red pepper in hot oil. Stir in reserved clam liquid and wine. Bring to boiling. Boil gently, uncovered, about 10 minutes or until sauce is reduced to about 1 cup. Stir in clams, tomatoes, and the 2 tablespoons parsley; heat through.
3.
Arrange the pasta on individual plates or a large platter. Spoon the sauce over the pasta. If desired, garnish with parsley sprigs. Makes 4 main-dish servings.
