Lamb Chops with Minted Fruit Sauce
A sauce made from orange juice, dried fruit, and fresh mint dress up lamb chops.

Makes 4 servings.
Ingredients

2 teaspoons sugar

1 teaspoon cornstarch

1/8 teaspoon salt

1 cup orange juice

2 teaspoons snipped fresh mint or 1/2 teaspoon dried mint, crushed

1/2 cup mixed dried fruit bits

8 lamb loin or rib chops, cut 1 inch thick (about 2-1/2 pounds)

Directions

For sauce, in a small saucepan combine sugar, cornstarch, and salt. Stir in orange juice. Cook and stir over medium heat until thickened and bubbly. Stir in mint. Cook and stir for 2 minutes more. Remove from heat. Remove 1/4 cup sauce and set aside. Stir fruit into remaining sauce; cover and keep warm.

Grill chops on an uncovered grill directly over medium coals for 12 to 15 minutes for medium-rare (145 degrees F) or until desired doneness, turning chops once and brushing with the 1/4 cup sauce. Serve chops with the fruit sauce. Garnish with fresh mint, if desired. Makes 4 servings.
To grill by indirect heat
Arrange preheated coals around a drip pan in a covered grill. Test for medium heat above the pan. Place chops on grill over drip pan. Cover and grill for 17 to 19 minutes for medium-rare (145 degrees F) or until desired doneness, brushing with the 1/4 cup sauce during last half of grilling.
