Jo Beard's Chess Pie
This Southern pie is noted for its simplicity of ingredients--butter, sugar, and eggs. Try it and see why it is so adored.

Ingredients

1 ready-to-use rolled-out piecrust

1-1/4 cups sugar

1 tablespoon fine-ground white cornmeal

1/2 cup (1 stick) butter, melted and cooled

4 eggs

1 tablespoon white distilled vinegar

1 teaspoon vanilla

1/8 teaspoon salt
Directions

Heat oven to 350 degrees F.

Unfold piecrust; fit into 9-inch pie pan.

Mix sugar and cornmeal in bowl. Stir in butter, eggs, vinegar, vanilla sand salt. Pour into pie shell.

Bake in 350 degree F oven 45 minutes or until set. If top starts to brown, lightly cover with foil about halfway through baking. Cool pie completely on wire rack. Makes 8 servings.
