Ingredients
  • 1   tablespoon olive or vegetable oil
  • 2   medium carrots, thinly sliced (about 1 cup)
  • 1   medium zucchini , sliced (about 1 1/2 cups)
  • 1   medium onion, sliced (about 1/2 cup)
  • 1   cup Campbell's® Tomato Juice
  • 1/4  cup grated Parmesan cheese
  • 1/4  teaspoon dried oregano leaves, crushed
  • 1/4  teaspoon garlic powder or 1 clove garlic, minced
  • 1 1/2  cups medium tube-shaped (ziti), medium shell-shaped or corkscrew-shaped pasta (rotini), cooked and drained

Directions
1. 
Heat the oil in a 10-inch skillet over medium heat. Add the carrots, zucchini and onion and cook until they're tender-crisp, stirring occasionally.
2. 
Stir the tomato juice, cheese, oregano and garlic powder in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the vegetables are tender.
3. 
Stir the pasta in the skillet and heat through, stirring occasionally.
