Italian Sausage and Lentil Stew

Ingredients

Vegetable cooking spraysee savings

1 lb.sweet Italian pork sausage, cut into 1-inch piecessee savings

2large carrots, sliced (about 1 1/2 cups)see savings

1large onion, chopped (about 1 cup)see savings

2 clovesgarlic, mincedsee savings

3 1/2Swanson® Vegetable Broth (Regular or Certified Organic)see savings

2 tsp.dried oregano leaves, crushed or 2 tbsp. chopped fresh oregano leavessee savings

1bay leafsee savings

2 cupscubed red potatoessee savings

1/2 cupuncooked dry lentilssee savings

2 cupscoarsely chopped broccoli rabesee savings

Directions
1.
Spray a 6-quart saucepot with the cooking spray and heat over medium-high heat for 1 minute. Add the sausage and cook until it's well browned, stirring often. Pour off any fat.
2.
Add the carrots, onion, and garlic to the saucepot and cook until the vegetables are tender.
3.
Stir the broth, oregano, bay leaf, potatoes and lentils in the saucepot and heat to a boil. Reduce the heat to low. Cover and cook for 40 minutes or until the lentils are tender.
4.
Stir in the broccoli rabe. Cook for 5 minutes or until the broccoli rabe is tender. Discard the bay leaf.
Tip:
Broccoli rabe, also known as rapini, is a slightly bitter vegetable that pairs particularly well with Italian sausage. When choosing broccoli rabe, avoid bunches with leaves that are wilted or yellowing.
