Ingredients

  • 4 cups Atkins Cuisine Penne Pasta
  • 8 ounces pickled mushrooms, halved
  • 3 ounces hot cherry pepper slices, finely chopped (about 1/3 cup)
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup coarsely chopped flat-leaf parsley
  • 1 tablespoon chopped garlic
Directions
1. 
Cook pasta according to package directions. Once the pasta is done, transfer to a large bowl.
2. 
Toss pasta, mushrooms, peppers, oil, parsley and garlic thoroughly. Season with salt and pepper and divide into bowls. Enjoy!
