Ingredients
  • 2 medium yellow, red and/or green sweet peppers, chopped
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil or cooking oil
  • 1 - 2 cloves garlic, minced
  • 3/4 cup chicken broth
  • Salt and black pepper
  • 4 Tyson® Grilled & Ready® Chicken Breast Fillets
  • 3 cups hot cooked mafalda or linguine
  • 2 tablespoons shredded fresh basil or snipped fresh oregano

Tuscan Pasta

A little bit of Tuscany comes to your table after making this tuscan pasta filled with fresh vegetables.

Directions
1. 
For sauce, in a large skillet cook and stir sweet peppers and onion in hot oil over medium heat 7 minutes. Add garlic; cook and stir 3 minutes until vegetables are very tender. Transfer vegetables to a food processor or blender container; add broth. Cover and process until mixture is smooth. Season to taste with salt and black pepper. Return to skillet; heat through.
2. 
Meanwhile, prepare Grilled & Ready® Chicken Breast Fillets according to package directions. Cut each chicken breast into thin slices. Serve the chicken and sauce over hot cooked pasta. Sprinkle with basil.
Serving Suggestion:
1. 
Sprinkle each serving with shredded Parmesan cheese. Serve with steamed broccoli.
