Individual Berry Crisps
Recipe from Pepperidge Farm

You can use either fresh or frozen berries to make these delicious crisps featuring a chocolate-almond crumb topping. They're especially good served warm - and start to finish they're ready in an hour!

Ingredients
  • Pepperidge Farm® Chocolate Chessmen Cookies, crushed (about 1/2 cup)

  • 2  tbsp.
    all-purpose flour

  • 1/2  cup
    whole almond, chopped

  • 2/3  cup
    sugar

  • 2  tbsp.
    butter, cut into pieces

  • 2  tsp.
    cornstarch

  • 4  cups
    fresh or thawed frozen berries (raspberries, blueberries, blackberries and/or strawberries)

Directions
1.
Heat the oven to 350 degrees F.

Stir the crushed cookies, flour, almonds and 1/3 cup sugar in a medium bowl. Cut in the butter with a pastry blender or 2 knives until crumbs form.

Stir the cornstarch, remaining sugar and 3/4 cup crumb mixture in a medium bowl. Add the berries and toss to coat. Divide the fruit mixture among 4 (8-ounce) ramekins. Top each with about 2 tablespoons remaining crumb mixture. Place the filled ramekins onto a baking sheet.

Bake for 25 minutes or until the topping is golden brown. Remove the ramekins from the baking sheet and let cool on a wire rack for 15 minutes.
