Directions

In a medium mixing bowl stir together eggs, buttermilk, the 1/4 cup melted shortening, and onion. In another bowl combine cornmeal, flour, and sugar. Add egg mixture to cornmeal mixture and stir just until moistened.

Drop batter by tablespoons, 4 to 5 at a time, into deep hot fat (375 degrees F). Fry about 1 minute or until golden, turning once. Drain on paper towels. Keep cooked hush puppies warm on a baking sheet in a 300 degree F oven while frying remaining dough. Makes about 55.
