Hush Puppies
Self-rising cornmeal and buttermilk are the key ingredients for these hush puppies--a perfect match for fried catfish.

Ingredients

1 egg

2-1/2 cups buttermilk

1/4 cup melted shortening, cooled slightly

1 tablespoon finely chopped onion

1-1/4 pounds (3-3/4 cups) self-rising cornmeal

1/4 cup self-rising flour

1 tablespoon sugar

Shortening or cooking oil for deep-fat frying
Directions

In a medium mixing bowl stir together eggs, buttermilk, the 1/4 cup melted shortening, and onion. In another bowl combine cornmeal, flour, and sugar. Add egg mixture to cornmeal mixture and stir just until moistened.

Drop batter by tablespoons, 4 to 5 at a time, into deep hot fat (375 degrees F). Fry about 1 minute or until golden, turning once. Drain on paper towels. Keep cooked hush puppies warm on a baking sheet in a 300 degree F oven while frying remaining dough. Makes about 55.
