Honey-Mustard Fruit Slaw
Give traditional coleslaw a twist by adding fruit and topping it off with delicious homemade honey-mustard dressing.

Makes 8 servings.
Ingredients

3 cups shredded green cabbage (about 1/2 of a medium head)

2 medium carrots, shredded (1 cup)

1 medium apple or pear, cored and coarsely chopped (1 cup)

3 tablespoons salad oil

3 tablespoons Dijon-style mustard or coarse-grain brown mustard

2 tablespoons lemon juice

2 tablespoons honey

1 clove garlic, minced

2 tablespoons chopped peanuts or cashews
Directions

In large mixing bowl stir together cabbage, carrots, and apple or pear; set side.

For dressing, in screw-top jar combine salad oil, mustard, lemon juice, honey, and garlic. Cover and shake well. Pour over the cabbage mixture; toss lightly to coat. Cover and refrigerate for 2 to 24 hours.

Sprinkle the slaw with peanuts or cashews before serving. Makes 8 servings.
