  • 1- 1/2  cups  assorted fruit (such as cubed melon, sliced star fruit [carambola], halved grapes, raspberries, pitted sweet cherries, cubed peaches, cubed pears, cubed mango, sliced kiwifruit, and/or chopped pineapple)On Sale
  • 2  tablespoons  low-fat vanilla yogurt (optional)On Sale

Directions

In a small saucepan, combine apple juice, honey, crystallized ginger, and lemon juice. Cook and stir over medium heat until boiling. Transfer to a small bowl; cover and refrigerate for 4 to 48 hours.

To serve, toss together assorted fruit. Spoon into tall stemmed glasses or dessert dishes. Pour apple juice mixture over fruit. If desired, spoon yogurt atop fruit mixture. Makes 2 (3/4-cup) servings.
