Hoisin-Sauced Turkey Tenderloin

Many turkey breast tenderloins are larger than 8 ounces. Trim the tenderloin down, if necessary, and store the remaining turkey in the freezer for another slow cooker meal.

1/2 of a mediumred sweet pepper, cut into thin bite-size stripssee savings

1/2 of a smallonion, cut into thin wedgessee savings

8 ouncesturkey breast tenderloin, halved crosswisesee savings

1 clovegarlic, mincedsee savings

1/8 teaspoonsaltsee savings

1/8 teaspoonpeppersee savings

2 tablespoonsorange juicesee savings

2 tablespoonshoisin saucesee savings

3/4 cupuncooked instant brown ricesee savings

3 tablespoonssliced kumquats (optional)see savings

2 tablespoonssliced green onion (optional)see savings

1 tablespoonchopped almonds, toasted (optional)see savings

Directions
1.
Place sweet pepper and onion in 1-1/2-quart slow cooker. Place turkey on vegetables. Sprinkle with garlic, salt, and pepper. Combine orange juice and hoisin sauce; pour over all.

Cover; cook on low-heat setting for 3 to 4 hours or on high-heat setting for 1-1/2 to 2 hours. If no heat setting is available, cook for 2 to 3 hours.

Meanwhile, cook rice according to package directions, omitting salt and butter. Slice turkey. Serve turkey with vegetables and sauce over cooked rice. Sprinkle with kumquats, green onion, and almonds, if desired.
