Herbed Lamb Stir-Fry
Although the lamb and veggie filling is stir-fried, the resulting sandwich is all Mediterranean. Savor the flavor inside a pita.

Ingredients

3/4 pound lean boneless lamb or beef top round steak

1/4 cup sliced green onion

1/4 cup snipped fresh parsley

1 tablespoon lemon juice

1/2 teaspoon dried thyme, crushed, or 1/4 teaspoon dried mint, crushed

1/8 teaspoon pepper

Nonstick spray coating
-
1 medium green or red sweet pepper, cut into bite-size strips

1 clove garlic, minced
-
1 tablespoon cooking oil

2 6-inch pita bread rounds, split horizontally and quartered

1/4 cup plain low-fat yogurt
Directions
1.
Partially freeze meat. Thinly slice meat across the grain into bite-size strips.

In a medium mixing bowl combine onion, parsley, lemon juice, thyme or mint, and pepper. Stir in lamb.

Spray a wok or large skillet with nonstick spray coating. Add green pepper and garlic and stir-fry 2 minutes or until pepper is crisp-tender. Remove from wok.

Add oil to hot wok. Add lamb mixture and stir-fry for 2 to 3 minutes or until done. Return peppers to wok. Heat through.

Serve mixture with pita bread. Dollop each serving with some of the yogurt. Makes 4 servings.
