Herbed Lamb Chops

A savory white wine marinade flavors these grilled rib chops, which are great for family dinners or entertaining.

Ingredients

8lamb rib chops, cut 1 inch thick (about 2 pounds total)see savings

1/2 cupdry white winesee savings

2 tablespoonssnipped fresh oregano, basil, and/or thyme or 2 teaspoons dried oregano, basil, and/or thyme, crushedsee savings

1/4 teaspoonblack peppersee savings

2 clovesgarlic, mincedsee savings

Directions
1.
Place chops in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl combine wine, herb, oil, salt, pepper, and garlic. Pour over chops. Seal bag; turn to coat chops. Marinate in the refrigerator for at least 4 hours or up to 24 hours, turning bag occasionally.

Drain chops, discarding marinade. Place chops on the rack of an uncovered grill directly over medium coals. Grill until desired doneness, turning once halfway through grilling time. Allow 12 to 14 minutes for medium-rare doneness (145 degrees F) or 15 to 17 minutes for medium doneness (160 degrees F). If desired, serve over wilted arugula. Makes 4 servings.
TO BROIL
Place chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat until desired doneness, turning once halfway through broiling time. Allow 8 to 10 minutes for medium-rare doneness (145 degrees F) or 10 to 15 minutes for medium doneness (160 degrees F).
