Hearts of Palm Salad with Passion Fruit Dressing
Mild-tasting hearts of palm and avocado pair up for a delicious side-dish salad. The sweet-tart passion fruit dressing bestows an exotic tropical beat.

Ingredients

1/2 cup grapeseed or olive oil

1/4 cup passion fruit puree (such as Goya)

1 tablespoon lime juice

1-1/2 teaspoons white wine vinegar

1-1/2 teaspoons sugar
-
1/4 teaspoon salt
-
1 shallot, peeled and chopped

2 teaspoons chopped parsley
-
2 hearts of romaine lettuce, cut into 1-inch ribbons (about 12 cups total)

6 hearts of palm, cut into 1/4-inch slices (from a 12-ounce can)

2 Haas avocados

Fresh cracked black pepper, if desired
Directions

Place oil, passion fruit puree, lime juice, vinegar, sugar and salt in the bowl of a blender. Blend until well combined. Stir in shallot and parsley and set aside.

In a large salad bowl, mix the lettuce and hearts of palm.

Cut avocados in half, remove the pit and score the flesh into cubes with a knife. Scoop the avocados out with a spoon and add to the salad bowl.
4.
Drizzle the dressing over the salad and toss gently. Finish with some fresh cracked black pepper, if desired.
