Ham Salad Sandwich
This is just a nice change from an ordinary ham sandwich
Recipe from Smithfield
3 cups Smithfield Deli Thin Cooked Ham, chopped
2 tablespoons sweet pickle, chopped
2 tablespoons dill pickle, chopped
2 hard-boiled eggs, peeled and grated
1/4 cup mayonnaise
1 teaspoon Dijon mustard
Salt and pepper
Mix all of the ingredients gently but thoroughly. Cover and store in the refrigerator for up to three days.
Makes about 3 1/2 cups.
Serve on bread as a sandwich. Can also serve on leaves of Boston lettuce with tomato slices.
