Ham Jambalaya

Jambalaya (juhm-buh-LI-yah) is the Louisiana version of Spanish paella. The name comes from the French word jambon, meaning ham.

  • 2  cups  cubed, fully cooked ham (about 10 ounces)On Sale
  • 1  14-1/2 ounce  can tomatoes, cut upOn Sale

  • 1/2  teaspoon  dried thyme, crushedOn Sale
  • 1/8 to 1/4  teaspoon  ground red pepperOn Sale

Directions
1.
Lightly coat a large skillet with nonstick spray coating. Add onion, green pepper, celery, and garlic. Cook over medium heat until vegetables are tender.

Add ham, undrained tomatoes, chicken broth, thyme, red pepper, and bay leaf. Bring to boiling; stir in rice. Reduce heat; cover and simmer about 20 mintues or until rice is tender. Discard bay leaf. Makes 5 servings.
