Ham and Corn Tostadas
For this quick dinner recipe, heat cooked ham and corn with salsa, then spoon over tostada shells.

Ingredients

1-1/2 cups chopped fully cooked ham (8 ounces)

1 8-ounce can whole kernel corn, drained

1/2 cup salsa

4 tostada shells or flour tortillas

1-1/2 cups shredded lettuce

1/2 cup shredded Monterey Jack cheese or Monterey Jack cheese with jalapeno peppers

1/4 cup plain low-fat yogurt

2 tablespoons sliced green onions
Directions

In a medium skillet combine ham, corn, and salsa. Bring to boiling; reduce heat. Cover and simmer for 5 minutes.

Meanwhile, place each tostada shell on a serving plate. Top each with shredded lettuce, ham mixture, and cheese. Garnish with yogurt and green onions. Makes 4 servings.
Microwave directions
In a 1-quart casserole combine ham, corn, and salsa. Micro-cook, covered, on 100-percent power (high) for 5 to 8 minutes or until heated through. Assemble as directed above.
