Haddock Casserole
From: Family CircleThis five-ingredient recipe is one of the easiest fish casseroles you'll ever find. The cheesy shrimp sauce is made with canned soup and takes just minutes to prepare.
Ingredients
1 can (10-3/4 ounces) condensed cream of shrimp soup
1-1/2 pounds haddock, cod or tilapia
1 cup crushed butter-flavored crackers (about 24)
1 cup (4 ounces) shredded cheddar cheese
1/4 cup milk
Directions
1. Heat oven to 400 degrees F. Coat bottom of 8 x 11-inch baking dish or 4 ramekins (2 cup capacity) with just enough soup to cover.
2. Place fish on top and pour remaining soup over fish. Sprinkle crushed crackers over fish; top evenly with cheese. Pour milk on top.
3. Cover with foil and bake at 400 degrees F for 1 hour or 35 minutes for ramekins. Let cool slightly before serving.
