Ground Turkey Stroganoff
Served over noodles, saucy stroganoff is great weeknight meal. Instead of the traditional beef strips, this stroganoff recipe is made with ground turkey.

Ingredients

2 tablespoons vegetable oil

1 large onion, chopped

1-1/4 pounds ground turkey

1 package (8 ounces) sliced mushrooms

1 large sweet red pepper, cored, seeded and chopped

1 can (14.75 ounces) chicken broth

3 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon paprika

1/2 teaspoon dried thyme

1/4 teaspoon black pepper

1 cup sour cream
-
1 tablespoon Dijon mustard

1 pound egg noodles
-
1/4 cup flat-leaf parsley, chopped
Directions

In large nonstick skillet, heat oil over medium-high heat. Add onion; saute 5 minutes. Add turkey, breaking it up into pieces, then mushrooms and red pepper; saute until turkey is no longer pink, 10 minutes.

In medium-size bowl, whisk together broth, flour, salt, paprika, thyme and pepper. Add to skillet, stirring to combine. Bring to simmering; simmer 3 minutes, stirring occasionally, until thickened.

Reduce heat to low. Stir in sour cream and mustard. Heat gently for 1 to 2 minutes until just heated through; do not let boil.

Meanwhile, in large pot of boiling water, cook noodles following package directions. Drain. Stir parsley into turkey mixture. Serve over noodles.
