Ground Beef Stew over Garlic Mashed Potatoes
From Betty's Soul Food Collection... The gang's all here, so make dinner special with ground beef simmered in a delicious sauce and then topped with everyone's favorite--garlic mashed potatoes.

Ingredients

1/2 pound lean (at least 80%) ground beef

1/4 cup chopped onion

1 cup Green Giant® Valley Fresh Steamers frozen mixed vegetables

1 can diced tomatoes, drained (14.5 ounces)

1 jar beef gravy (12 ounces)

1/4 teaspoon dried marjoram leaves
-
1/4 teaspoon pepper
-
1 cup water
-
2 tablespoons butter or margarine
-
1/2 teaspoon garlic salt
-
1/2 cup milk
-
1 1/3 cups Betty Crocker® Potato Buds® mashed potatoes (dry)

1 tablespoon chopped fresh parsley
Directions

In 12-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.

Stir in mixed vegetables, tomatoes, gravy, marjoram and pepper. Heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until vegetables are tender.

In 2-quart saucepan, heat water, butter and garlic salt to boiling. Remove from heat; add milk. Stir in dry potatoes and parsley. Let stand about 30 seconds or until liquid is absorbed.

Fluff potatoes with fork. Serve beef mixture over potatoes.
