Grilled Red Trout with Apple Salad

A crunchy apple side salad goes well with the grilled fish in this easy dinner recipe.

Ingredients

2Granny Smith apples, cored and chopped (2 cups)see savings

3/4 cupchopped celerysee savings

1/4 cuppine nuts or chopped almonds, toastedsee savings

1/4 cuplemon-flavored olive oil or 1/4 cup olive oil plus 1 tsp. finely shredded lemon peelsee savings

3 Tbsp.white wine vinegar or cider vinegarsee savings

1 Tbsp.snipped fresh sage or 1 tsp. dried leaf sage, crushedsee savings

1/4 tsp.saltsee savings

1/8 tsp.freshly ground black peppersee savings

2 Tbsp.buttersee savings

6 6- to 8-oz.trout filletssee savings

Salt and freshly ground peppersee savings

Directions

In a medium bowl combine apple, celery, and pine nuts. In a small bowl whisk together oil, vinegar, sage, the 1/4 teaspoon salt, and 1/8 teaspoon pepper; toss with apple mixture. Cover and refrigerate up to 1 hour.

Skillet Method: Melt the butter in a 12-inch skillet over medium-high heat. Sprinkle boned side of fish with salt and pepper; add 2 or 3 fillets to skillet; cook for 3 minutes. Turn and cook for 3 minutes more or until fish flakes easily with a fork. Transfer to serving platter and cover to keep warm. Repeat with remaining fillets, adding more butter, if necessary, and reducing heat slightly if fish begins to brown too quickly.

Grill Method: Melt butter and brush on boned side of fillets; sprinkle with salt and pepper. Grill on the greased rack of an uncovered grill directly over medium coals for 6 to 8 minutes or until fish flakes easily when tested with a fork, turning halfway through grilling with a wide metal spatula. Or grill fish, half at a time, in a greased grill basket.

Serve fish with apple salad. Makes 6 servings.
