Grilled Pork Tenderloin Sliders with a Berry Sauce and Blue Cheese Butter

  • Smithfield Marinated Pork Tenderloin (we used Hickory Sweet flavor)

  • 1 tablespoon
    olive oil

    soft dinner rolls

For Sauce:
  • 3 cups
    mixed berries such as blackberries, raspberries, and blueberries

  • 2 tablespoons
    sugar

  • 1 tablespoon
    water

  • 1 tablespoon
    balsamic vinegar

Garnish:
  • 1/4 cup
    mixed berries

Blue cheese butter:
  • 1/4 cup
    butter, softened

  • 2 tablespoons
    blue cheese, softened
    see savings

Directions
1.
In a medium sauce pan place berries, sugar, and vinegar. Cook over low heat stirring often and mashing with the back of your spoon until sugar dissolves and berries break down. Remove from heat and allow to cool.

In a small bowl, mix together butter and blue cheese.

To Grill:
Brush tenderloin with olive oil. On a medium-high setting, cook 25 minutes per pound, covered, or until meat thermometer registers 160 degrees F internal meat temperature. (Uncovered grill will require longer cooking time.)Remove from grill and allow to rest for 5-10 minutes. Slice into 1/4-inch slices. Will yield 20 slices.

To Assemble Sliders:
Spread one side of each roll with the blue cheese butter. Top with 2 slices of tenderloin and a spoonful of berry sauce. Secure with a decorative skewer and a berry. Wrap in parchment and pack for the game!
