Grilled Pear Tomato Relish

Miniature tomatoes grilled or cooked stovetop with brown sugar and spices make a delicious relish in less than 30 minutes.

Ingredients
  • 2  cups
    red and yellow miniature tomatoes such as currants, grape, or cherry

    olive oil or cooking oil

  • 1/2  tsp.
    packed brown sugar

  • 1/8  tsp.
    ground cloves, ginger, or nutmeg

Directions
1.
In a medium bowl combine all ingredients. Toss gently to mix thoroughly without breaking skins of tomatoes.
2.
Heat a grill-top frying pan on the rack of an uncovered grill directly over medium-hot coals or medium-hot gas burner about 5 minutes or until hot. Add tomato mixture to pan; cook and stir for 3 to 5 minutes or until skins begin to pop and tomatoes are softened and heated through. Season to taste with salt and pepper. Serve over grilled steak, pork chops, shrimp, or salmon. Makes 4 servings.

Stovetop Directions
Heat grill pan or medium-size skillet over medium-high heat until hot. Add tomato mixture; cook and stir as directed above.
