Grilled Curried Pineapple

These curried pineapple slices add a tropical touch to your backyard barbecue.

Ingredients

1 mediumpineapplesee savings

-
1 tablespoonmargarine or butter, meltedsee savings

1 tablespoonpacked brown sugarsee savings

-
1/4 teaspooncurry powdersee savings

-
1/2 cupplain yogurtsee savings

-
2 tablespoonstoasted coconutsee savings

Directions
1.
Cut pineapple crosswise into six 3/4-inch-thick slices. Stir together margarine or butter, brown sugar, and curry powder.
2.
Grill pineapple slices on an uncovered grill directly over medium coals for 6 to 8 minutes or until heated through, turning once and brushing once or twice with margarine mixture. To serve, cut slices in half. Serve warm topped with yogurt and coconut. Makes 6 servings.
