Grilled-Corn Relish
A spoonful of this easy summer relish adds a burst of fresh flavor to steak or fish. Or use it as a delicious side dish.

Ingredients

3 Tbsp. lime juice

1 Tbsp. cooking oil

2 cloves garlic, minced

2 fresh ears of corn, husked and cleaned

1 tsp. chili powder

1 small avocado, halved, seeded, peeled, and cut up

1/2 cup chopped red sweet pepper

1/4 cup snipped fresh cilantro

1/4 tsp. salt
Directions

In a medium bowl, combine lime juice, oil, and garlic. Brush corn lightly with lime juice mixture. Reserve remaining juice mixture. Sprinkle corn with chili powder.

Place corn on the grill rack directly over medium heat for 25 to 30 minutes or until corn is tender, turning occasionally.

Meanwhile, stir avocado, sweet pepper, cilantro, and salt into reserved lime juice mixture. Cut cooked corn kernels from cobs; stir into avocado mixture. Makes 8 (1/4 cup servings).
