  • 2  cloves  garlic, mincedOn Sale
  • 2    fresh ears of corn, husked and cleanedOn Sale
  • 1  tsp.  chili powderOn Sale
  • 1  small  avocado, halved, seeded, peeled, and cut upOn Sale
  • 1/2  cup  chopped red sweet pepperOn Sale
  • 1/4  cup  snipped fresh cilantroOn Sale
  • 1/4  tsp.  saltOn Sale

Directions

In a medium bowl, combine lime juice, oil, and garlic. Brush corn lightly with lime juice mixture. Reserve remaining juice mixture. Sprinkle corn with chili powder.

Place corn on the grill rack directly over medium heat for 25 to 30 minutes or until corn is tender, turning occasionally.

Meanwhile, stir avocado, sweet pepper, cilantro, and salt into reserved lime juice mixture. Cut cooked corn kernels from cobs; stir into avocado mixture. Makes 8 (1/4 cup servings).
