Grilled Cajun Pork

Ingredients
Cajun Rub:
3 tablespoons paprika
1 teaspoon each ground cumin, cayenne pepper and ground allspice
1-1/2 teaspoons salt
2 tablespoons light-brown sugar
Pork and Rice:
6 center-cut boneless pork chops (4 ounces each)
2 cup long-grain white rice
1 can (15 ounces) kidney beans
1 package (10 ounces) frozen corn, thawed
2 scallions, sliced
Directions
1. Cajun rub: Combine paprika, cumin, cayenne, allspice, salt and sugar. Reserve 1 teaspoon rub.
2. Pork and rice: Sprinkle remaining rub on both sides of pork. Let stand 20 minutes. Bring 4 cups water to a boil in large saucepan. Add rice and reserved teaspoon rub. Cover; simmer 20 minutes. Drain and rinse beans; add to rice along with corn and scallions. Cover and cook 5 more minutes.
3. Meanwhile, prepare grill with medium-hot coals or heat gas grill to medium-high. Grill pork for 4 minutes per side or until an instant-read thermometer registers 160 degrees F. Serve with rice on the side.
