Ingredients
  •   Cajun Rub:On Sale
  • 3 tablespoons  paprikaOn Sale
  • 1 teaspoon  each ground cumin, cayenne pepper and ground allspiceOn Sale
  • 1-1/2 teaspoons  saltOn Sale
  • 2 tablespoons  light-brown sugarOn Sale
  •   Pork and Rice:On Sale
  • 6   center-cut boneless pork chops (4 ounces each)On Sale
  • 2 cup  long-grain white riceOn Sale
  • 1 can (15 ounces)  kidney beansOn Sale
  • 1 package (10 ounces)  frozen corn, thawedOn Sale
  • 2   scallions, slicedOn Sale

Cajun rub: Combine paprika, cumin, cayenne, allspice, salt and sugar. Reserve 1 teaspoon rub.

Pork and rice: Sprinkle remaining rub on both sides of pork. Let stand 20 minutes. Bring 4 cups water to a boil in large saucepan. Add rice and reserved teaspoon rub. Cover; simmer 20 minutes. Drain and rinse beans; add to rice along with corn and scallions. Cover and cook 5 more minutes.

Meanwhile, prepare grill with medium-hot coals or heat gas grill to medium-high. Grill pork for 4 minutes per side or until an instant-read thermometer registers 160 degrees F. Serve with rice on the side.
