Grilled Asparagus Vinaigrette

For grilling, we prefer asparagus with thick stems, but the pencil-thin spears are perfectly acceptable.

Ingredients
Vinaigrette

2cloves garlic, mincedsee savings

-
1 tablespoonchopped fresh basilsee savings

-
2 tablespoonsred wine or white wine vinegarsee savings

-
1/2 teaspoonDijon mustardsee savings

-
1/2 teaspoonsaltsee savings

-
1/4 teaspoonfreshly ground black peppersee savings

-
1/4 cupextra virgin olive oilsee savings

Salad
-
1 smallhead Boston or butter lettuce, separated into individual leavessee savings

-
1 to 1 1/4 poundsasparagussee savings

-
Shaved Parmesan cheese, optionalsee savings

Directions
1.
Prepare medium-hot charcoal fire, or preheat gas grill (or broiler).
2.
To make Vinaigrette: Combine garlic, basil, vinegar, mustard, salt and pepper in bowl. Slowly pour in olive oil, whisking until oil is fully incorporated.
3.
To make Salad: Divide lettuce among four plates, or arrange on large platter.
4.
Brush asparagus with vinaigrette. Grill, turning occasionally, until asparagus is tender and grill-marked, about 8 minutes.
5.
Arrange asparagus on lettuce. Drizzle with remaining vinaigrette. Garnish with Parmesan, if using, and serve.
