Green Tomato Chow Chow

Sauerkraut is the surprise ingredient in this green tomato relish recipe. Make it ahead, it can chill for up to one week.

Ingredients

2 mediumgreen tomatoes, chopped (1-1/2 cups)see savings

1 mediumwhite onion, chopped (1/2 cup)see savings

1 smallgreen sweet pepper, chopped (1/2 cup)see savings

1 cupsauerkraut, rinsed and drainedsee savings

3 Tbsp.sugarsee savings

2 Tbsp.white vinegarsee savings

1 Tbsp.yellow mustardsee savings

1/2 tsp.saltsee savings

Directions
1.
In a large food processor combine tomatoes, onion, sweet pepper, sauerkraut, sugar, vinegar, mustard and salt. Process with several on/off turns until coarsely chopped. Transfer to a bowl. Let stand at room temperature at least 2 hours before serving or cover and chill for up to 1 week. Makes about 3 cups (24, 2-tablespoon servings).
