Ingredients

1 poundSmithfield bacon, cooked crisp and choppedsee savings

1prepared (ready made) pie dough for 9" piesee savings

2 tablespoonsDijon mustardsee savings

-
3 ouncessoftened goat cheesesee savings

-
1/2 teaspoonchopped fresh thyme, plus additional sprigs for garnishsee savings

-
3-4 mediumgreen tomatoes cut into 1/4" slicessee savings

-
1/2 teaspoonsea saltsee savings

-
1/4 teaspoonfreshly ground black peppersee savings

Directions
1.
Preheat oven to 400 degrees F. Press dough gently into bottom and sides of a 9-inch tart pan. Bake for 20 minutes.
2.
While the tart shell is warm, gently spread the Dijon mustard over the bottom and top with half of the goat cheese. Sprinkle with thyme. Layer the bacon, remaining goat cheese and tomato slices in an overlapping pattern on top. Sprinkle salt and pepper evenly over the tomatoes.
3.
Bake for an additional 15 minutes. Allow to cool 5 minutes before serving.
