Green Beans and Onions

No more boring green beans! In this side-dish recipe, onions, roasted red peppers, olives, and a sweet and tangy sauce add flavor and interest.

Ingredients

1 tablespoonolive oilsee savings

1-1/2 cupschopped onionsee savings

1 tablespoonbalsamic vinegar or red wine vinegarsee savings

1/2 cupbottled roasted red sweet peppers, drained and choppedsee savings

-
1/4 cupsliced pitted ripe olivessee savings

-
2 tablespoonssnipped fresh basil or 1-1/2 teaspoons dried basil, crushedsee savings

-
1/4 teaspoonsaltsee savings

-
1/8 teaspoonground black peppersee savings

-
1 poundfresh green beans, trimmed and cut into 2-inch-long piecessee savings

Directions
1.
In a large nonstick skillet, heat oil over medium-low heat. Add onion; cook about 10 minutes or until the onion is very tender and golden brown. Stir in vinegar. Cook and stir for 1 to 2 minutes more or until liquid is evaporated. Stir in roasted red peppers, olives, basil, salt, and black pepper. Remove from heat; cover and keep warm.

Meanwhile, in a covered large saucepan, cook green beans in a small amount of boiling water about 10 minutes or until crisp-tender; drain. Stir the onion mixture into green beans.
