Greek Tacos
From: ParentsA cucumber and feta cheese topper makes these seasoned beef tacos different than the version you usually eat. Give them a try for dinner some night.
Ingredients
1 teaspoon vegetable oil
1 pound lean ground beef
1 small onion, chopped
3 garlic cloves, minced
1 teaspoon each mint, paprika, and salt
1/2 cup petite diced tomato in garlic, basil, and oregano
1/3 cup ketchup
8 taco shells, warmed
1/2 seedless cucumber, shredded
1 large tomato, chopped
1/4 cup crumbled feta
Directions
1. In a saucepan, heat oil over medium-high heat. Add meat and onion and cook until browned, about 5 minutes. Add garlic, mint, paprika, and salt. Cook 1 minute. Stir in diced tomatoes and ketchup. Reduce heat to low and simmer 10 minutes. Serve with warmed taco shells, cucumber, tomato, and feta.
