Greek-Style Pasta Salad

In this refreshing main-dish salad, tuna and feta cheese are arranged on bow tie pasta that's been tossed with a tangy mint and oregano vinaigrette.

Ingredients

4 ouncespackaged dried bow ties or elbow macaronisee savings

1medium cucumber, quartered lengthwise, seeded, and cut into 1/2-inch thick slicessee savings

1/4 cupchopped red onionsee savings

1/4 cupsliced pitted ripe olivessee savings

1/4 cupolive oil or cooking oilsee savings

1/4 cuplemon juicesee savings

1 tablespoonsnipped fresh oregano or 1 teaspoon dried oregano, crushedsee savings

1 tablespoonsnipped fresh mint or 1/2 teaspoon dried mint, crushedsee savings

1/4 teaspoonpeppersee savings

Lettuce leaves (optional)see savings

1 6-1/2-ounce canchunk white tuna (water pack), chilledsee savings

1 cupcrumbled feta cheese (4 ounces)see savings

Directions
1.
Cook pasta according to package directions. Drain pasta; rinse with cold water. Drain again.

In a large mixing bowl combine cooked pasta, cucumber, red onion, and olives. Toss lightly to mix.

For dressing, in a screw-top jar combine oil, lemon juice, oregano, mint, and pepper. Cover and shake well. Pour dressing over pasta mixture. Toss to coat. Cover and chill for 4 to 24 hours.

If desired, line individual salad plates with lettuce. Spoon pasta mixture onto the lettuce-lined plates. Drain tuna and break into chunks. Arrange tuna and feta cheese on top of the pasta mixture. Garnish with cherry tomatoes. Makes 4 main-dish servings.
