Ingredients

1 10-ounce package finely shredded green cabbage (6 cups)

1/2 cup dried cranberries

1/2 cup chopped walnuts, toasted

1/4 cup finely chopped red onion

1/4 cup finely chopped green sweet pepper

1/4 cup cider vinegar

3 tablespoons canola oil

1 tablespoon sugar or sugar substitute* equivalent to 1 tablespoon sugar

1/2 teaspoon salt
Directions

In a large bowl, combine cabbage, dried cranberries, walnuts, red onion, and sweet pepper. In a small bowl, whisk together cider vinegar, oil, sugar, and salt. Add to cabbage mixture. Cover and chill for 1 to 24 hours. Toss before serving.
