Gnocchi Gorgonzola

Gnocchi are potato dumplings and are most often served as a side dish in Italy. In this quick and easy recipe, purchased gnocchi are tossed with a blue cheese and ham sauce to make a tasty main dish.

Ingredients

8 ouncesGorgonzola cheesesee savings

1 teaspooncornstarchsee savings

1 package(8 ounces) diced hamsee savings

1 package(9 ounces) frozen peassee savings

-
1/4 cupmilksee savings

-
1/8 teaspoonblack peppersee savings

2 poundsgnocchi (see Note)see savings

Grated Parmesan cheese and freshly ground black pepper, to tastesee savings

Directions
1.
Bring a large pot of lightly salted water to boiling.
2.
Crumble Gorgonzola cheese onto a sheet of waxed paper. Toss with cornstarch and set aside.
3.
In a 10-inch nonstick skillet, heat ham over high heat until sizzling. Add frozen peas and heat through. Stir in crumbled Gorgonzola and the milk. Season with pepper.
4.
Cook gnocchi in boiling water for 2 to 3 minutes, according to package directions. Drain, and toss with Gorgonzola sauce. Serve warm, sprinkled with Parmesan and freshly ground black pepper, if desired.
Note
Look for this shelf-stable, potato-based dumpling near dry pasta in the supermarket.
